A Healthy Holiday Appetizer Recipe

Cranberry and Feta Stuffed Mini Peppers
- 12 mini sweet peppers
- 4 oz. reduced-fat cream cheese
- 2 tbsp crumbled feta cheese
- 2 tbsp dried cranberries
- 1 green onion, finely chopped
- Fresh parsley for garnish (optional)
- Salt and pepper to taste
- Slice off the tops of the mini peppers and remove the seeds.
- In a mixing bowl, combine cream cheese, feta, dried cranberries, green onion, salt, and pepper.
- Stuff each mini pepper with the cream cheese mixture.
- Arrange the stuffed peppers on a serving platter and garnish with fresh parsley if desired.
