A Healthy Holiday Appetizer Recipe

Cranberry and Feta Stuffed Mini Peppers


  • 12 mini sweet peppers
  • 4 oz. reduced-fat cream cheese
  • 2 tbsp crumbled feta cheese
  • 2 tbsp dried cranberries
  • 1 green onion, finely chopped
  • Fresh parsley for garnish (optional)
  • Salt and pepper to taste


  • Slice off the tops of the mini peppers and remove the seeds.
  • In a mixing bowl, combine cream cheese, feta, dried cranberries, green onion, salt, and pepper.
  • Stuff each mini pepper with the cream cheese mixture.
  • Arrange the stuffed peppers on a serving platter and garnish with fresh parsley if desired.
